2 1/2 cups of chocolate cookie crumbs, crushed in a food processor

1 1/4 cups of pecans

1/2 cup of good bourbon

1 cup of confectioners sugar, plus a little more to roll the balls in

3 tablespoons of unsweetened cocoa powder

1 1/2 teaspoons of honey

In a food processor combine cookie crumbs and pecans, process until nuts are finely ground.

In a separate bowl combine confectioners sugar, honey, bourbon and cocoa powder. Add to the mixture in the food processor and pulse until combined. Let the dough rest for 4 hours uncovered, or lightly covered overnight. It will dry out a bit, that is normal.

Roll the dough into 1 inch diameter balls with your fingers. After making the balls roll them in confectioners sugar. Store the balls in an airtight container if you like them moist, or uncovered if you lie them a bit crunchy. Roll the balls again in confectioners sugar before you serve.
